IF you're looking for a winter cycling destination to get away from the cold and snow I highly recommend going to Mexico. I've been there many times. Usuallly solo. Never had any problems. Of all the places i've been to in Mexico i really enjoyed Oaxaca; spectacular beaches, mountains, colonial and indigineous towns and cities. Lots to see and do.

Thinking of going back this January and riding from Puerto Vallarta to Acapulco along HWY 200 down Mexico's Pacific coast. Anyone outhere done this route with advice or recommandations???

I will do Cuba this January, Havana to Holguin, the trip will be about 1400 Km.

If i'm not mistaken, you'll be heading into the prevailing winds if you go west to east. And they can be quite strong. Also central Cuba is not the most interesting part of Cuba. I haven't cycled it but i've been told by those who have that it can be dull. If i were you i'ld take a bus to Holguin and do the easter loop i did a few years ago
