I actually spent some time practicing this with my wife holding bottles. She helped me with some events in which this stuff mattered.
We found that it was better for her to hold from the very bottom, which allowed me to get my hand around the more narrow top portion. We had fewer drops that way. This especially held true when I was grabbing one of the tall bottles with the narrowed down neck that I could grab.
One other thing: as the riders approach you will be on the right side of the road. They will be passing you from left to right (as you face the road). Move the bottle slowly from your left to right to prevent them from slamming it out of your hand. Just make sure that you keep it on an even level so the riders can target it.
Good luck.
I guess it's just a matter of personal preference. Personally, when I race, I like to take my bottles from the bottom, which means the person is holding it from the top. Actually, this is really the only way I've seen it done.
easy rider is right with the fact that you need to hold the bottle at shoulder-level for the rider. I've seen people holding it entirely too low for the rider, resulting in a dropped bottle. Another good tip is to lightly jog in the direction the rider is going. This way, you don't get that slamming effect. It's a smoother transition.
