max, max, max, 'nacho' cheese is not a cheese. go to trader joes and check their cheese section out (you won't find nacho). so many good cheeses and so many i haven't tried.

some of my favorites:
manchego- a spanish sheep's milk cheese
dry jack- it's almost like parmesan

I have two favorites:
Humbolt Fog-a soft goat cheese
Roaring Forties-a wonderful blue cheese
I also have to second the manchego with good syrah.

I love sharp cheddar, especially with vino.
As a matter of fact I dig any cheese that don't give me the runs...

I like most any cheese that I can't spell, can't remember the name of, and stinks :-)

Dubliner is awesome, perhaps my favorite. They have a good one at Trader Joe's, too. I could eat about a pound per hour, given a sharp knife, a couch, and a hockey game on TV.

My girl got me into artisan cheeses really. We like to go to the farmers market and sample some of the nicer cheeses at the wine and cheese place. I really like the drunken goat cheese.

Don't get me started on wine though. Scotch too, don't start me on that either.. heh

By virtue of my name I'll have to agree with your favorite cheese.

Crumble some of it on salad and your salad instantly becomes a Greek salad. I love that stuff.
