Hi. I am buying a bike from someone in Europe (Italy) not via eBay, but the seller is a reputable eBay seller, so I trust the guy enough to conduct business with him. We agreed on the price, but now how can I securely send him the money and still be relatively protected (in case the bike arrived trashed, arrived not at all, etc).

He proposed Paypal as payment method. I seem to know that with Paypal, if the money was coming from a credit card (as opposed to bank account) I could have the credit card company as a recourse in case something goes very wrong, or at least in theory?

Obviously he has to send the package insured and with some kind of a tracking or delivery confirmation method. Should I request a specific shipping method (UPS or other? I have no experience with the Italian post, if something went wrong wouldn't USPS reject the fault on the Italian post and the other way around).

Your advice would be most appreciated if you have experience doing something like this. Thanks!!

Pretty sure that Paypal offer an Escrow service, where they'll hold the money til you both agree it's ok.

Pay you money, and take your chances... PayPal offers some protection, but your credit card company is actually able to reverse charges if you can prove that you've been scammed. I've been able to reclaim funds through PayPal on an overseas transaction where the item never showed up.
Postal insurance should cover damage on an item that was damaged (or lost) in transit, as long as the item was well packed before hand. BE SURE to tell the seller how you'd like the item packed... It's the few times where I wasn't insistant, when improperly packed items were damaged...
