I realize that cannondale doesn't really make anything entry level, but within there own product line what are there entry level bikes.... Also, are these any good?

The Rush or Prophet come in a wide variety of specs and prices. Pretty much all their bikes come in a variety of specs, there isn't one model thats just an entry level bike. You can get an entry level prophet, or a high end prophet.

certainly one of the "best in class", since the entry level prophet uses the same frame as the high end prophet, which makes it very upgradeable component wise.

I think the old jekyll's are good entry level FS, I bought a used one for $600 and it suits me great!

You can't lose with a Rush or Prophet. Buying one of the 600's means that you're getting a great frame and as things wear out you can replace them over time with high end components, as much as your finances allow.
As Quick Torch said, you can also look at used Jekyll's and Scalpel's if you want to take a smaller hit on purchase.

You can get a used Jekyll on ebay for like $600. I just got my prophet 1000 and I love it. It rides so nice. Get a lefty!

are the rush and prophet the same in terms of like product scale, or is one higher than the other? They're both "all-mountain" but is there a difference in what they should be used for?

Actually the Prophet is more all mountain, with lots of clearance under the bottom bracket and lots of travel (140mm) The Rush is capable of a lot of the same terrain but is geared more towards XC and doesn't have quite the ground clearance. Line them up side-by-side and you can see the differences but they are rather similar, and both are very capable.
