I have a Maillard Helico matic rear hub attached to a Trek 560 and am trying to track down the model mumber to order a replacement rear hub. Does anyone have a way I can check that as it isn't obvious on the hub?

To be honest, get rid of that Hub from Hell! You'll have nothing but problems including broken spokes and then you'll need the tool to remove the freewheel. If you want to stay period correct, try finding a rear wheel with a Sansin or Suzue hub depending on the year of your trek which may be an 1984. Just guessing.

I got rid of mine by having a new wheelset built. I was able to have an Open Pro/105 set built and that allowed me to move from a 5 speed to a 7 speed cassette.

If you really like the Maillard's, I have the original wheels from my Trek 520. Not really worth the money to ship to you IMO. But you can have them for the cost of shipping.

I just arrived home from work after taking a PAINFUL detour thru Rutland
to hit my LBS up for 4 new spokes for my Pugs hell-0-komical. Why would
you want to change to this set-up ?
Friends dont let friends ride Hell-0-Komatics !!! :D

Not really interested in period, just getting something compatible. All the wheels/hubs in my LBS seem to be too broad, and I don't want to start pulling the stays apart. It looks like a 5 inch/ 130mm gap for the axle. Have googled the two companies above and am seeing what I can find.
Any further advice greatly appreciated

130 mm is the standard for all newer bikes. You can put any newer wheelset on. My bike had a spread of 126 mm. Spreading the stays are easy on a steel bike, I've even seen guys mount the 130 mm hubs simply by pulling the stays apart enough to get the wheel on. I found NOS hubs at 126 mm and had the wheels built from there. The Maillard hubs are junk and it really isn't worth trying to save them.

I'm talking the two Helicomatic rears I've got and using them to build wheels to store and stretch sewups (I prefer to have a wheel as opposed to a rim for storing new tyres, as I can get awful violent doing that first stretch).
No doubt, once built, I'll actually ride the bloody things just for the ability to say I have, but I've been long warned off about actually using the hubs.
