I'm looking for a front mech for my new build, however i've noticed on shimano and sram's websites that they suggest a chain stay angle of no more than 69 degrees for their mechs.
Would it make much of a difference if my chain stay's 71 degrees?

A couple of degrees shouldn't matter much.
