Any recommendations on getting a first CX bike, something that is entry-level but not a waste of money? What about shoes and pedals, too? Are all mtb. bike shoes useable?

I looked at a Kona Jake before I got a JTS. they are about $700 - $800.

I just got my 2006 Kona Jake for $600 a few weeks ago - My LBS said Kona was selling the 2006 models for 25% off.

The idea is that there are plenty of sources for good cheap cyclocross bikes. As long as you don't stick yourself with the idea of having the news trick crap, most of which is worthless, then you can get away pretty cheap with very good equipment.
Most MTB shoes work well for cyclocross though I prefer Specialized because I have a wide toe box and narrow heals.
For pedals I recommend SpD's though I use Crank Bros. pedals and they work well. The reason is that you can ride SpD's around the neighborhood with street shoes whereas you pretty much have to wear cycling shoes even to go up to the store with Crank Bros. pedals.

Diggin my Jake. Got it last summer and it's served as an everyday commuter. Been trying to do some CX style training on weekends a little bit, and hope to race next fall. (didn't this yr b/c I got married and was out of the country for 3 weeks...)

My first CX bike was a redline conquest (full 105 was stock at the time). They can be had for $700-$1000 new. The bike is still going strong after about 10,000 miles on trails and as a daily commuter.
They introduced a Conquest Sport this year with lower components and as such a lower price.
If you are interested in single speeds, the Bianchi San Jose has been great as my winter ride.

have you considered a used frame?
when I started in the woods for handling improvement, I put a set of spacialized tri-cross tires (700x28) on an older road bike I had, along with a bar-end shifter for the rear, and kept the downtube for the front der. the clearance was minimal, but as long as I stayed away from heavy mud it did the job.
the following winter, I got a used Cuevas, which was a very nice steel frame...very comfy given the use...just transferred all the parts over with some canti-brakes.
now I have a gunnar x-hairs
