When Touring for a week or so at a time. What is a must to pack?
Obviously a tent, sleeping bags, but what about small stoves. What kind of stove?
What about changes of clothes, laundry stuff, food?

If I'm riding through towns I don't carry any groceries. I buy what I need at the last town before my evening stop. I'll carry a few packets of oatmeal, maybe some Ramen, or leftover bag-o-salad from the night before, but not much.
If you need to refuel your stove, I think the ability to burn unleaded gas is a must. A friend had a butane stove and we wasted a lot of time, stopping at a bunch of little towns, in a futile search for a cartridge. Meanwhile, I could just stop at any gas station and fill up my little bottle for 25 cents.
As far as the rest of it goes, I think packing lists are very personal. You have to discover what you want and what you can live without. In my book it's preferable to wear clothes a few times, even if they're stinky, rather than carry several changes of clothes. I try to handwash my clothes while I'm in the shower so I don't have to make a stop at a laundromat (unless it's raining.)
One tip that has served me well has been to bring a small notebook. While I'm actually on tour I take notes - what did I bring that was REALLY valuable, what was marginal, what bring that I never used, and what did I not have that I wish I had? When I get home I copy those lists and write my reflections on my computer. Then, when I start planning the next trip, I read those notes. It's a big help. I forget all the nitty-gritty details after I've been home for a few months.
