it's easy, it goes like this:

take a tortilla, i'm partial to sundried tomato and basil.

paint one side with olive oil (using a brush)

put that face down on a cookie sheet.

LOAD ER UP WITH CHEESE. (tex-mex shredded stuff is good. cheddar, mozza, colby, monty jack, n jalepeno peppers.... mmm.)

put a tortilla on top.

LOAD ER UP WITH CHEESE.

put a tortilla on top.


cover one side with olive oil (that should be face up)

load 'er in an oven, until the top gets brown (watch it, it browns fast)

flip it over

load 'er in an oven, until the top gets brown (watch it, it browns fast)

cut, and enjoy.

it looks a lil' unappetizing because it's yesterday's leftovers... but yes, the tortillas are in fact pink, they are sundried tomato and basil as mentioned earlier.

We need better proof than just that revmonkey sign. We'll require at least an 11 megapixel non-interploated TIF photograph clearly showing the quesadillas in question, your face with no sunglasses or expression, three (3) copies each of your birth certificate, social security card and driver's license, utility bills from the past 6 months and a monitor displaying this thread with the edit box open on your original post to verify that the picture is really yours.

I mean.. uh, those look good :)

I got fed up off all the cheese running away in the oven, I switched to 2% cheese and bought and electric griddle.

Now I make kick ass quesadilla, I use the mexican cheese and add sharp cheddar to it, and spray the tortillas with extra virgin olive oil.

For those wondering how I know it is "Kick Ass" my wife loves them.

I'm confused..there are 2 layers of cheese? On top of the second tortilla? Doesn't it just fall off and stick to the pan when you flip it over?

I like to make my tortillas in a pan..just add alittle oil, heat, flip a few times..and instant goodness in 2 minutes!

note: Here down the road in Palmetto, FL is probably the world's biggest walk in "Hot Sauce" store. AND everything else that is made with hot sauce.

i'm not sure what you're getting to with the first question....

no it doesn't get stuck to the pan, becaues the olive oil doesn't let it get stuck to the pan. the bottom doesn't cook. when you flip it over, then it'll cook.

I use an electric griddle or frying pan. Here's my tip of the day. Grill some chicken with a little garlic first. I butter the tortillas, but I think I'll try olive oil next time. You don't need much cause the griddle should have plenty of chicken grease on it (that's the secret to my quesadillas). If you're making several, add a little garlic to either the tortillas or the grill each time. Perfect chicken quesadillas every time, guaranteed to please.

Thanks for the tips, ima use three tortillas and olive oil next time.
