Ok, I'm a clipless n00b, but I think got getting in and out down. Now how the heck do I take the plastic piece off that comes with the bike? The tension is at it's lowest, but I still can't get it off ... my hands hurt now.

Wouldn't it be nice if in the documentation provided with a new bike, Shimano would give a small page dedicated to removing the pedal platforms?

I never asked the LBS about how to remove them since I assumed, like Raiyn that you would simply twist them off like a cleat.

Mine are still on the bike and I will be replacing the pedals with my Egg Beaters.

I would have been upset if I tried to remove the platform inserts only to break them and render them useless.

Thanks for the helpful link on how to proceed should I decide to remove them!
