Is it possible to go to a auto parts store and buy some mineral oil for my XT disc brakes? I really hate spending $15 + shipping for only 50ml of mineral oil.

Heck,I might be tempted to try some mineral oil from a drug store.It is an old fashioned laxative,so you will know where to find it.Since it is pharmaceutical grade, it won't have any additives.The only downside is I suspect it is higher viscosity than the brake mineral oil your disc calls for.It also won't have whatever additives the brake folks use.
I don't think the auto parts guys will have pure mineral oil.

So the right mineral oil fluid costs $15.00 plus shipping. How much is it likely to cost you if you gum up your caliper or something like that?

Consider $20 or so cheap insurance and buy the Shimano oil. You really don't have to change it that often, if ever, so it's not like it's a huge expense.

Yeah, I thought about that. Also water absorbtion and maybe reaction with any residual oil in the pump, caliper and hose. It always surprises me how some people will pony up for a relatively expensive hydraulic disc brake set and then cheap out on the least costly part, the fluid.

I have 3 bikes to bleed meaning $15 x 3. Just trying to save a couple bucks is all but it looks like it's not really an option.

More likely it'll be $15 divided by 3. It doesn't take very much fluid to bleed a bike disc brake.
