Thanks for a glimpse of pie on earth.
A slice from three pies and I would need to ride for four hours to burn the calories. Oh well, I like pies and I like biking.

My wife cannot eat wheat gluten, but there are recipes for gluten-free pie crusts, so there is no reason to go pie-less for the rest of your life.
We also have a bakery here that specializes in wheat-free products. Their name is Silly Yaks.

I need wheat, barley, rye, and oat free stuff. Yes, it can be
done but we are too lazy to do it often. Since I eat nearly
infinite quantities of carbs and don't enjoy sweets much it is
easy to get along!

My wife foregos wheat, barley, and rye. She can eat oats. We've been picking up pasta & noodles made out of rice, corn, quinoa, potato and a few other things.
So you can't eat oats, eh? A lot of people with gluten issues can.
My wife loves gluten-free Newman's Own oreo cookies. They taste almost exactly the same as the original oreo cookies. There's a popular ginger snaps cookies that are gluten-free too. But most of that stuff isn't very good.
Fortunately for me, I do not share that particular problem with her.

There is one thing I miss. In general Colorado food is mediocre,
but the beers are outstanding. There are 3 (that I have heard
of) gluten free beers in this country, but I tried the one from
your state (WI) and I'll pass.

Don't know about that subject. Beer is not something one would normally associate with gluten, but it seems to be everywhere.
