I have Sun Swift SL1 Aero rims and Specialized Mondo 700c tires. This happens to be a very tight fitting combo, and requires an inordinate amount of effort to remove and re-mount the tires. Anyone have suggestions on tires that would fit a lot more loosely on these rims?

my conti gatorskins have always fit easily on my (wide) ritchey rims.
i'd stay away from rubinos and armadillos.

If you buy a 'Tire Bead Jack' for about $10, you can deal with just about any tire/rim combination......as long as you are not trying to put a 650 on a 700 rim or something like that. Good luck.

I'm familiar with the bead jack, but I'd like tires that are easy enough to remove with standard levers and re-mount with my bare hands.

i actually didn't have much trouble getting my armadillos on when I got them. I've heard other reasons to stay away from them, apparently they wear stupid fast if you skid with them, but I don't do so much skidding since i run a brake and have a pretty high gear ratio, so I've been very happy with them.

I had a hand injury (torn ligiments) which made it nearly impossible to change a tire. I found the easiest tires to change are the Verensteen (sp?) Tri-Comps.

The Serfas Seca RS tires and the regular Serfas wire bead tires are also incredibly easy to mount. The Seca RSs even more than the wire bead ones.
