The IRO buy and the choice of 1" threaded vs 1 1/8" threadless got me thinking: what's the difference between threadless and quill-type stems? I know the physical difference, I'm interested in the real-world, functional difference?

I have a old fixie conversion with a quill, and a new gearie with a threadless. Both seem to steer me down the road just fine.

What would make someone prefer one over the other? So far all I've figured out is aesthetics, and ease of handlebar installation. What else? Are parts cheaper or more readily available for one or the other?
