My Shimano 105 brake calipers use one piece pads (non cartridge). I normally replace them with Shimano BR1055 Brake Shoe Set (M50T).
Will my caliper take Dura-ace cartridge type pads as I want to switch to the Kool Stop cartridge system.

Yes- obviously you need the cartridges...

Those will work, but my favorite shoes for these are the Kool Stop "Mountain/BMX" model.
