Am thinking of upgrading a few things on my do-it-all road/CX Kona bike. Have a few questions that I was hoping folks could help me out on:

1. To get a better fit, I'm going to install a longer stem. My current stem is a 105mm Easton EA-30, kind of a hybrid road/MTB stem for cyclocross use. I'm planning on getting a stem off of ebay, probably a 130mm. My question is: will a road stem work for me, or will it not be strong enough? What exactly are the differences between a road and MTB stem? Anything off-road on the bike will be confined to fire roads (maybe 10% of the total riding time on the bike).

2. Also, I'm thinking about getting another set of wheels, so that I can transition quickly between riding off-road with knobbies, and slicks for the roads. My current wheels have a 12-25, but I'm thinking of putting a 12-28 cassette on the new wheels (trust me, they have such a thing -- not Shimano, but a few other mfrs. make them.) With the two different size cassettes, will I be able to swap them out without running into chain length problems? If I run a longer chain to accomodate the 12-28, will I encounter noticeable chain slack when running the 12-25?

GO Big-big and then pull ALL the slack out of the chain. Does it look like you have enough to add 3 more teeth?
The chain should be , as I understand it, 1 linkset (+any addition portion thereof) extra to considered proper length.
Many chains are longer than that. You basically have to look to know for sure.
If you have the chain set for the 28, you shouldn't have any problems with the 25. Look at all 11-34, 12-30 etc. the cassettes. The only time you would possibly get any droop was on small-small and you're not supposed to use that gear either (assuming you have a triple).

Yeah, I'm going to have to add a few links, but you're right, once adjust chain for the larger rear cassette, the 12-25 should easily be swappable.

Anyone else have any input on whether a road stem works for cyclocross?

The difference between a "road" stem and a "mountain" stem is the diameter of the bar clamp. A "road" stem is plenty strong enough for your purposes.
