Ok, who else spends more time at the BBQ than the stove (hand up). I've got a monster outdoor grill, a jumbo smoker and 2 of the R2-D2 smokers. Oh, 3 other smaller grills too. :)
Food just tastes better off real wood smoke.
Favorite recipes? I just got done doing a whole hog over Alder and it came out awesome!

mmmmmm bbq... There is nothing like a wood/charcoal bbq in the snow. I enjoy cedar plank salmon in the summer - rub on some brown sugar, honey, and cayenne pepper and place the fillets on a cedar plank. Smells heavenly.

The oven never gets used unless the grill runs out of propane. We use the burners, but only for the occasional stir-fry. Why, just this week I've grilled 4 chicken breasts, 8 burgers, 6 sirloins, and some tuna,

I spend much of the summer BBQing. When its 110F outside and the AC is working overtime to keep it 85F inside, the last thing I want to do is use the oven or stove top.
I BBQ a fair amount in winter too.

Smoked salmon..........yummmmmmmmm Dang and it's lunch time. I can guarantee the Company roach coach doesn't have anything that elegant. :D
I get huge meat cravings once in a while.. must be my body telling me something. Usually only red meat can satisfy at that point.
I spend a fair amount of time at the grill and at the stove. I grill rather than smoke, though I've been thinking about a smoker (though I really don't need to eat more meat).
I'm a weber man - my main grill at my house is a Weber performa, which is a charcoal grill with propane ignition. My weber at my ski place is a normal charcoal grill, and I do a grilled turkey every thanksgiving.
I use alder on fish, but I've never tried it on pork. Beef usually gets a little mesquite, chicken some sort of fruit wood (apple or cherry), and fish mostly gets alder. I don't really like the cedar on salmon (alder is more traditional), and I don't usually use hickory.

Two Cornish Hens. A tin Pie plate filed with 1/2 water and 1/2 apple juice. Salt, pepper, garlic powder, onion powder,paprika and brown sugar.
Mix dry ingredients and rub into skin of the hens. Heat up the grill (charcoal or hard wood is my preference). Place hens on indirect heat and smoke for about 1 hour. Place the pie plate in the grill/smoker so it steams the hens for about 30 minutes or so. The meat falls off the bones and it is so good you could eat both hens by yourself.

This morning I fired up a beer can chicken. Hope the neighbs don't think anything with me crackin that beer at 5 am LOL

Who cares? That was totally sweet.
Beer can chicken was a success. After smoking all day I placed it on some tinfoil and grilled it high heat for 5 minutes to make it crispy...YUM
