I have an Optima Baron that I am converting to 700c (to take advantage of my race wheels). Does anyone have a suggestion on how to modify a brake system to allow the 26" brake bosses to work properly with a 27" wheel? I am not worried about the front, as I will be changing the fork...

If I can't find a good system, I guess I will go 650c all around, but it would not be my first choice.

I cannot fit a 700c wheel on my Baron - the brake bridge is too close. Are you saying that your brake bridge will allow it? Obviously, disc brakes completely eliminate that issue, but your race wheels probably aren't disc-compatible. :(

Same here. I do run a 650C wheel in the back with a Shimano 600 brake.

With Paul Motolite Z brakes you can move the pads up and down the brake arm, but I don't know if they can go from 26" to 700c.

Check out Paul Moto BMX brakes, they are just like the Motolite Zs but with a wider range of adjustment.

I should amend what I wrote. discs will eliminate the problem of locating the brakes, but if the bridge is so close that you can't fit the wheel, then you're SOL. I recommend using 650c if you're going to try big wheels. If the experiment is a flop, you can at least keep the 650C on the rear.

The Lynxx does not suffer from the same limitation with the brake boss as the Baron. It is set up for v-brakes, and there is ample clearance for a 700c wheel, as I have had one on in the trainer with no problems at all...

I have checked the fit in light of how much higher the bike will be with the 700c wheels... it is going to be a bit of a stretch, but I am using it for highway miles, so I am not forseeing a problem... provided I can get the brake system to work. I had though of discs as well, but that rules out my 6500 wheels...
