any wheel will work. i wouldn't go with the rolfs, though, since they'll be a pain to fix when they go out of true, and one of thew fundamental truths of cyclocross is that wheels will go out of true. i raced on ambrosio excellence [bad choice -- they're like putty] and mavic open pros [good choice, they're bullet proof]. i'm thinking of having a set of race wheels built up with mavic cxp-33s...
I am running some CXP-33s myself right now. I raced them last season with no issues whatsoever. I handbuilt the wheelset and I would recommend that you do the same to achieve the best results. The CXP-33s are a little heavy but it is worth it in the long run for a more durable wheel.

I had Rolf Vector's on one of my Jake the Snake's, and Mavic CXP33's on my other Jake the Snake. The Mavic CXP33's have never had a problem. The Vector's didn't either but I did not have the bike long, whereas the one with the Mavic CXP33's I have had for 3 years. I guess what I am saying is the Mavic CXP33 is a great choice for sure.
what are some good lightweight bulletproofs?
