Touring - Using 81 Super Sport for loaded touring?

(This is a bit of a cross-post from the Vintage forum, but it applies here too)

I'm interested in getting into fully-loaded touring and have been shopping for a new bike to do that with. I have a whole other thread going on that.

However, it occurred to me that I have an old Schwinn Super Sport out in the garage that might be suitable. From all I can gather, it is a 1981 model. Has front/rear racks, triple chain ring, "1961" on the front badge. While I still may go with a new bike, I'm interested in this forum's opinion on how feasible it would be to use the Super Sport as a loaded touring bike.

The bike has all (or at least, most) original equipment on it still, since it hasn't been ridden since the 80's. Assuming that I had a bike shop check it out, tune it up, and replace anything that needed replacing, how suitable a bike would this thing be for fully-loaded touring ala TransAm, TransTexas, etc...? And how upgradeable would it be to more modern stuff, such as a 9-speed cog, newer derailleurs, brakes, wheels, etc...?
