Choosing rims / wheels

I have been looking at the tire sizing page over at Sheldon Brown's site ( http://sheldonbrown.com/tire-sizing.html#width ) and would really like to get a set of wheels with some 19mm width rims for my 'cross bike. I am a 210lb 6'3" rider so I like 700x28 for road riding and would love to be able to go up to 700x40 for cross and trail riding on the same set of wheels. I might eventually get 2 sets, but it isn't in the budget right now.

Is there a good place to sort available pre-built wheels or rims by width to see what my options are? Ideally I would go for about a 28/32 spoke setup on mid level hubs. Thoughts?

Mavic open pros are 19mm in width (give or take .6mm), and often regarded as the best all around road rims ever. I think you can grab a set laced to 105 hubs from bicyclewheels.com for $180 or so. 32 holes probably. I believe most road rims are going to be about 19mm, with the exception of super aero rims, which wouldn't be nearly the spoke count you want anyway.

I'm not sure of any online stores or databases that let you sort rims by rim width. I would look for wheels with at least 32 spokes that you want, and check from there. As far as I can tell, most should be 19mm wide or so, so they can take your skinny road tires, or those 38's you want to run for cross without any problems. Correct me if I'm wrong on this.
