Commuting - 3 speed question

If I was to take the pin out of a 3 speed hub, what gear would it be in. I am trying to make a ss using a 3 speed hub, it has a freewheel on it, so i don't have to worry about a coaster brake, will be able to use rim brakes. But I was wondering about the gearing, would it be in the easiest or hardest gear after I remove the pin and hardware. Plus it's a Parkleigh Monterey frame, never heard of it or can't find no info on the BF or Google. Any info would be greatly appreciated.

I have a Sturmey Archer AW right here with no shifting pin in it, and its in a neutral state. Does that mean there is something wrong with it? I plan on disassembling it soon to clean it out before I oil it and put it in service. I don't have the pin so I can't test it yet...

I have an old Shimano 3S hub that has broken pawls.
I can use 2nd, which is direct drive.
I stuck a little spacer (actually it was about a #6? nut) under the "nut" that the shift cable attaches to.
I had to play with the amount the nut was threaded on to position the indicator spindle the proper depth (centered on 2nd gear)
Maybe something like that would work for you?.

Third gear and you wont be happy with it as a single speed bike!

The rear wheel weight will be higher than a simple Hub and as there is no coaster brake in the Hub you'll still be mounting brake cables.

It'll be in the hardest gear. It's not hard at all to run a cable and shifter for a three-speed hub and having the extra gears is so nice. I have an old Shimano 3-speed hub with coaster brake so the only cable on the bike is for shifting the hub and braking only required pedaling backwards so there are no brake calipers, cables, or levers.
