If so, is it better to leave em, get replacement cages (ugh!), or straighten them out?

maybe, dismantle and put it on a flat surface like a good table to make sure, then correct by hand.
I concur. It should be repairable.

Yes. Are you running an indexed pulley on a non-indexed derailleur?

uhh, probably. I pulled the jockeys off a random Shimano mtn derailleur. This is bad, I take it. Any cheap and easy suggestions (i.e. not Soma or NOS campy jockeys)?

I though I responded already. Hmmmm......disappearing posts. Oh, well.
I was just curious about the jockey wheels. If your bike shifts fine there's no reason you cant use them.

Have you tried using it yet? It might work fine as is. It looks like the bottom of the cage is bent out. I'd be worried if it was the top of the cage or the bottom was bent in. Who knows, might be making a fuss for nothing. It is easily straightened if it does effect how it performs.

haven't used this derailleur yet. It's earmarked for the Rossin I will soon possess (oh please, oh please!). I'm sure I'll have a million other questions as it comes together, but this derailleur seems to be the only issue, for now.

Is that a Nuovo Record Derailleur? It looks like the the removable piece of the cage is on backwords. The pulley that picks up the chain (the lower one which is the one on the left side of the picture) should be shrouded on both sides of the chain. The way your deraileur is assembled the exit pulley is shrouded on both sides. I don't see why there would any problem straightening it out.
Like cyclotoine said, take it apart and check if it's bent. If it is indeed bent, using a rubber club and a vice you can straighten it out again.
