Just got a shiny new ultegra cassette and fitted it fine etc but i have one major problem; The chain skips on pretty much every cog. The chain is pretty old so do you think by geting a new one this will be solved? and do you know if ultegras need an ultegra chain?

Get a new chain that is made for the number of gears on your cassette. Your problems will be solved.
So will it have to be an ultegra chain aswell or can i just get any shimano 9 speed chain?
Get a new chain today. It'll work like magic.
A new chain will probably fix it but a misadjusted cable can also cause skipping.

Any model Shimano or SRAM chain of the right width (i.e. 8-speed, 9-speed, etc. depending on how many cogs your cassette has) will work fine. You don't need to match the group name.
Replace the chain.
And while you're there buy a chain wear gauge.
