are there any folding bead road tires fatter than 700x23? Ones with puncture resistance would be great.

Schwalbe makes a folding tire in 700 x 38 (Marathon Racer). I believe Michelin and Continental also make folding tires wider than 700 x 23.

I've had good luck with the Vittoria RANDONNEUR PRO folding tires.
