Hi Greg and welcome to BF.
When I lived in Orlando this (http://orangecycleorlando.com/index.cfm) was my favorite bike shop. Not near UCF though. :(

Welcome to Central Fla!
Best Shop IMO is Orange Cycle. They have far exceeded my expectations when it come to professional service. I drive from East Orlando (Chuluota) to get there and pass about three 'good' shops on the way.
Also, Floridafreewheelers (http://www.floridafreewheelers.com)offer some nice group rides. Check their site for times.

If you're at UCF, I would most definitely suggest checking out Bike Works (http://bikeworks.com/). Totally smart people over there, close to you, really honest and good prices. Another great shop is Glory Cycles over on Virginia, just west of Mills Ave.
Blanchard is a decent (though short) ride. There is a critical mass that meets on the last Friday of every month in the parking lot of the Science Musuem. Good place to meet other riders. If you have a way to transport your bike, there's a great trail called the West Orange Trail. It's pretty far from UCF though. I know a lot of people that do group rides out to Mount Dora and back, but that's a huge ride.
I mean honestly, though there aren't a lot of bike lanes around Orlando, it's a pretty place to street ride. Well, outside of east Orlando at least. It's fun to ride from UCF out through downtown and around there. There's starting to be a lot more people riding, so it's not as dangerous as it was 5 years ago or something.
