What is the best way to align the cleats on my SiDi shoes? I have lined them up with the back of the shoe against a table, but as soon as I unclip it twisted.

IMHO the best way to align the cleats for any step in pedal design is to find a LBS that has a FITKIT system with the rotational cleat adjustment mechanism and have your cleats fitted on this. Without going into a long, historical ramble about how cleats were adjusted b4 step in pedals, I'll just say that the FITKIT will set the cleat in a position that should be as close to natural for YOU as possible.
