Road Cycling - Sora STI on a 7 speed?

If 8 speed and 7 speed chains are the same size, is it possible to adjust the derailieur stops so that an 8 speed STI Sora shifter can be used on a 7 speed cassette? (slight run on sentence) Otherwise do I have any other options? I have downtube shifters and want STI, but don't want to change everything.

I have seen 7 speed Sora STI shifters for sale.

I thought of another option- Since Sora 7-speeds are apparently discontinued, if you were to buy an 8-speed sora on sale and then buy an 8 speed cassette, you might be ok. www.sheldonbrown.com has a lot on compatibility, and you may be able to do it simply. There are 20% off coupons at performancebike.com and nashbar.com. Just look at the Hot deals forum.

Descartes has sora 8-speed cassette and shifters for sale.
