Foo - A question about growing lettuce

I don't have a backyard, so I am using the front yard to grow vegetables with eye appeal.

I planted red sails lettuce.

My question is, can you cut/harvest the lettuce more than once? Does it keep growing back, or is it done after the first cutting?

Yes you can, it does grow back, and will bolt (and the crop is done) when the weather turns hot.
When it does start to bolt (it'll stat to send out stalks to flower) you can either cut it down and plant something else or let it flower and collect the seeds (they are tiny) for next year.

I just pick out the outermost leaves when they're ready for eating. New growth occurs on the innermost leaves, so just stripping the outer leaves gives you a steady supply of +20 Salad of Freshness.

AllenG and SingingSaber. can you prevent bolting by cutting the middle part where the stalk shoots from or by cutting the bolt stem when it emerges?

I tried doing that with some spicy mustard lettuce and it didn't work. Your mileage may vary, though.

Nope sooner or later it's going to bolt. When it's time for it to flower, it's going to flower.

You can plant a second crop in the fall, September down here (Georgia), you may be able to plant earlier.

I bought these lettuce plants in flats. I was about to buy seeds, then I noticed that the store was having a blow-out on their vegetable plant flats. 6 plants for $0.50. That is cheaper than growing by seed, and more importantly a lot faster.

The disadvantage is that all the lettuce gets planted at once and I am not planting by seed. Maybe as AllenG suggests, I can plant some lettuce seed following the harvest of some of this lettuce crop.
