Ok, so I have a cyclometer and a headlight. I'm thinking of adding a mirror. I used to have a compass/bell that was handy.
How does one accommodate all these items and still have a handlebar to hold on to?

Its called a space bar and it clamps on the handlebar and extends out a couple of inches and the bar is about 5 inches long so you can clamp a light and a computer or whatever. Do a search on bikenashbar or ebay or any of the online stores and you should find that or something similiar

If it gets too crowded, several manufacturers make a t-shaped bar that attaches to your handlebars to give you more space for accessories. See:

I had a Minoura Space Bar and now a Swing Grip (the space bar broke and was replaced free of charge for their current model - thanks a LOT to Urbane Cyclist).. I had it on my mountain bike shortly after this pic (below), and had both of my headlights mounted on there, leaving a lot more 'room' on my 'dash' for just the bell near right shifter and my computer. It wasn't super cramped, but my bars have the bend in, which makes for cruddy angles on mounted stuff. Right now, I only have the silver schwinn light on there, as the PB5000X is on my roadie and don't even have the swing grip mounted.

Why tie the tail in a knot around the handlebars of course! Hanging the cat by the tail ought ti keep it in a fighting mood. Then when dogs start chasing, untie the cat and use the cat like a fighter plane uses flares to redirect the attention of missiles! :p I'm bad.
Nitto makes a very nice one called a lamp holder. They are sharp looking. I think Ben's Cycle sells them online.
