I was waiting to see if someone who actually had some custom wheels would chime in, but since you have no responses so far I'll just say that I've heard good things about willow glen bicycles wheels, but haven't tried them myself.

The "Crazy German", Tahn, over at Willow Glen is the guy to see.... I'm new to the area, and haven't used him myself, but I've seen some of his wheels, and talked to people that have used him.
