I just found a used trek 1200 with clipless pedal for 300 bucks. It's a 58cm and I've wondering if this bike would be okay for my 320lb and 6ft tall with a 32 inch inseam. It's about an hour drive to go and look at it so if this isn't even close for fit, I'll save the gas.

The fit is the important part...you should be pretty close to a 58, You will probably want to upgrade the wheelset to support your weight. Search the clyde forum, there is always discussion about wheels. You will probably want a 32 or more spoke wheel.

58 should be right about spot-on for you. It depends on "you", but generally I think it'd be fine for you.
The 1200 is a good ride, but as previously hinted, you'll probably want to replace the rear wheel. Still, that will add maybe $100 to the price, and at $400 it's a steal.
I too have a 32" inseam and I recently was bike shopping and had myself sized by a few LBS's just to check for consistency and all of them had me sized at 55-56cm depending on the brand of bike as not all came in the same size.
Torso size will have a lot to do with it too. As the top tube length obviously gets longer as the seat tube does.
The only way to know for sure is to try it. It will be close but that is a SWEET deal so it is worth it to check it out IMHO.
As for the weight. I am aout 245 give or take and when I was asking about weight tolerances the issue was never the frame but the wheels. According to a couple of LBS's most of the "entry level" bikes have high spoke count wheels that are safe well above the 300lb mark.
Take all of that for what it is worth as it is second hand from my recent bike search. I am sure there are some experienced riders here that can help expand on the weight thing.

Let's put it this way, if I were you, and I hadn't just bought a Trek 7.2FX, I would buy the 1200 in a second. It seems to be about the right size for you, and it at a GREAT price.
I love my 1200. I was 250 when I first got it. If the rear wheel is stock then its probably OK. They come with a pretty beefy alex rim. I beat the crap outa that wheel and it only ever went untrue on me once. I upgraded to the the Bontrager race light wheels when I hit 200 but I still keep the Alex rim for winter and nasty weather.
Im 6'2" and ride a 60. Its almost too small for me. (long legs/long arms)

test ride a Trek in a 58cm at a local shop first. That way you'll know. Personally, I think the 58 will be too big. (I'm 6'3" and ride a 58)

I just spoke to the seller. It's a lot older than I was expecting. He thinks it's a late 90's maybe a 98 or 99. It's an aluminum frame and fork with a mix of components. He wasn't for sure on the components, but he said it's all shimano and a mix of 105 and 600's. He said that someone had converted it from a down tube shifter to bar end. Plus it's a double not a triple. So I'm not to enthused about the bike now. Considering what you could buy brand new left over 06's (which where triples and had a carbon fiber fork) for I'm not sure what the bike is worth. He said he was negotiable though. I'll have to reseach the older 1200 a little.

Or maybe I should just buy it and find out if I like riding a road bike. I don't know enough about bike to trust my judgement when buying used, especially that old, but my budget won't allow for a new one.
That Trek is down to $300 now. I was just digging through the Rochester Craig's List to kill some time and saw it. Good thing I vaguely remembered this thread or I would have bought it out from under you!
edit: Oh! I see it always was* $300. Somewhere in thread it changed to $400. Sorry.

I think I'm going to hold off on this one. I'm going to look at an 01/02 XO1 for $400 tomarrow.

I rode an 07 too and liked it. I'm sure the older ones won't be quit as nice but I think the price is right.(he dropped it from 500 to 400) The draw back is the fact that it has sora shifter as compared to the new ones that are a full 105 set. The bonus is the older ones where a triple where the new one are a double(compact I think). I'm still pretty slow and a triple will be a big benefit for me. I'm cheap and I'd like to get it cheaper than 400, but I'm not sure how good of a price 400 is and whether or not I should take it if he won't move any more on the price.
Here is the bike.
