My bike club has a annual summer picnic after the Saturday ride and although the food will be provided by the club, we have been asked to bring along a dish to share. I am wondering what I could make. How about rice pudding? How do you get it to be so thick, do you have to add custard powder and such to it?

Any other ideas?

Perhaps a potato salad in the French style, with herbed vinaigrette? Not as healthful as tabbouleh, but better than the mayonnaise-based potato salad one often finds at picnics, and good even in hot weather.

some kind of dead animal (like dead cow, pig, or chicken) waiting to be burned slowly over reh-hot coals and slathered with bbq sauce, ketchup, mustard, or mayo.

Depends ... I'm on the BOD of my club - and one of the "staples" kind of people who is supposed to bring something "good" in ... so I try and judge what people normally bring in and then try to make something else - we usually have plenty of salads, couple of funky vegan dishes and lots of desserts so usually I go for a vegetable dish - or appetizer kinda thing. Sometimes get pretty creative with some mini quiches with a couple different fillings.

Taboulleh is bulgar with cucumbers and tomatoes (and sometimes red onion) with fresh parsley, mint, olive oil and lemon juice. Very fresh and light on a hot summer day Hummus is puréed chick peas (aka garbanzo beans) with garlic and perhaps paprika and a touch of olive oil, and makes a good spread. Both very healthy. :)

Taboulleh is good, but a very polarized dish. You either love it or you hate it. I like it (wish it had cilantro instead of parsley though), but many people will turn their noses to it, unfortunately.

Crescent Rolls

Fruit Salad

Hummus is very easy to make and you can buy pita bread at most grocery stores now.

Corn pudding (cornbread with real corn and very, very moist)

Empanadas (not as healthy, but I know an easy way to cook them if you are interested)

Green Bean Casserole

Cornbread Stuffing

I can provide (relatively simple) recipes for any of these if they catch your eye. Just let me know.

It is occassions like this where I like to suggest my Dad's chilli recipe. It helps humble people by bringing them closer to the ground, via time spent on the toilet.

Ooo, I forgot about the broccoli salad I used to make ... think that's on the menu this weekend when I fire up the schmoker again ...

And you can NEVER, EVER go wrong with bacon :)

Broccoli Salad

* 2 bunches broccoli, florets only (5 to 6 cups florets)
* 1 medium red onion, chopped
* 1/2 cup raisins
* 10 to 12 slices bacon, fried and crumbled
* .
* Dressing:
* 1 cup mayonnaise
* 2 tablespoons balsamic vinegar
* 2 teaspoons sugar
