I know Laurent Fignon lost the yellow jersey on the final day of the 1989 Tour de France. Has anybody else ever managed to lose it on the final day?
Lance should have in 2003. My man Ullrich was beating the crap out of lance the whole tour.

Yes, not even all that rare. In 1968 Jan Janssen wore yellow for the first time after teh final stage. I'm pretty sure that has happend at least one other time. In 1947 Pierre Brambilla loses over 20 minutes on a flat stage to drop from first to third.
It has become less common with the abolition of final stage time trials and outright rare with the 10 circuts in Paris.

No one ever challenges the GC on the final stage. It's more of a ceremonial parade for the yellow jersey, and the sprinters go for the stage win.
Next to last stage is usually an individual time trial, and the GC frequently changes on this stage, cos the time trialers get their last shot at glory.

I think you are assuming the 1989 Tour ended traditionally, with a group ride into Paris. It did not. Lemond's individual time trial victory ended that year's Tour, with high drama.
