im really interested in doing an event like this at my college, what exactly is the science behind it? Do I just got two rollers and a cyclo computer for each?

more or less. Sometimes the magnetic sensors are hooked up to a computer to facilitate display.

Some people from Chicago made an open source roller racing program, if you search for it on the SSFG forum you can probably find it.
