So, I'm searching for tires for my Fixed/Track and want something classic. I am sick of all these tires with crazy colors and huge logos plastered all over them. Does anyone still make a nice, simple and classic "Skinwall" tire that is slick or near slick and will last?

here is a tire that fits at least the first two of your preferences. I don't have any experience with them, or any vredestien tires for that matter, so I don't know if they last very long. 19.95 at good ol' n-bizzle.

Throw on a tubular wheelset and get some tubbie tires!
Warning: not recommended if you're going for that brakeless street build.

Those vredestien look nice, but I wish they had them in 700x23, I found some through a search but I think they might be black wall.

When I bought them from Nashbar, the item description and picture was different. That picture they've got is a black tire for sure, but the description says tan? Who knows, give Nashbar a call.
Bontrager Select K are available in skinwall, but buy something better. I went through two sets, got a fair amount of flats and they didn't hold up well to skidding. Have switched to non skinwall because I cant get anything nice in skin at the lbses around here. I hear that tourguard paselas are the bomb though, as well as the Ruffy Tuffy and Rolly Polly, some nice skinwall tires that Panaracer makes for Rivendell.
The veloflex tires are really nice looking, but i've never ridden one, and they only come in 700x22c max. My friend has vittoria evo classics that are the classiest joints I've seen. Panaracer makes some that are rather gross, but the might have some nice ones in the lineup. gommitalia makes some nice looking ones too.

Wow those veloflex tires are gorgeous! Maybe I should shell out the dough for those....reviews seem less than good though...hmmm

Yep they look like wimpy little race tires, but fast as hell if you have a support car with spares. :) Racers have much different needs from commuters and ****-arounders.

I bought one of the vredestien ricorsos from Nashbar since they were like 10 bucks. Sorta low budget, low tyre pressure, not really smooth, but they look sorta nice with the gumwalls, even though I thought it was all black when I bought it since the picture on the website shows it as such.
But I dont have any experiance riding it yet....

I got tan wall tires from harris cyclery. I wouldn't recommend the ones I got if you want to ride fast. When I finally put some slicks on, there was a noticable difference in smoothness and speed.

Veloflex are great--- but they are definitely fragile- and last maybe only 2000km. An Open Corsa (Vittoria) looks similar, but has better flat protection.

I don't skid they are nice tires that are built like tubs they haven't had a flat or a snake bite yet I weigh 220# and run 23s if thats any indicator the max pressure is appx 115 7-8 bars they are nice because they have a good folding bead and have a silk/kevlar construction really smooth
They come as a matched set in a tin so I try not to skid and mess em up
Anyone know of any that are entirely skin? I am wanting way old school look.

I found one fantastic option: Vittoria Open Corsa ECO CX 700-23. They are really nice, though a racing tire (so thin). If you google them you shouldn't have a hard time finding some.
skinwall...sounds unsavory.
Schwalbe Milano tires are very nice (got them on my fixed) but they are tubulars.

Challenge makes several high quality tan sidewalls. Grand Bois, too. I wouldnt use them for skidding much though.

For non-tubular I recommend Michelin Erilium 2 Kevlar.
