Can the coaster brake on Shimano's Nexus 7-speed hub be removed simply? If so, are any additional parts required? I assume that it shares most parts with the roller-brake version.

You can remove the Nexave roller brake from the Nexus-8, and the Nexus-7. The coaster-braked Nexus-7, however, is integrated, and I suspect its removal is beyond the capability of most.

As always, you are most wise. Methinks, in theory, one could remove the coaster brake with enough time and skill.
The one question I've always had, and do not know how it would work out... what if one just cut the reaction arm off of a coaster brake?

You could seize the hub and possibly damage the frame.
