is there any site or database type of thing with information on long distance routes, at least throughout california. i need to know which highways are legal and safe and generaly the best way to travel.

bikely.com can show you routes that other cyclists have published. Some of these might be long distance.
adventurecycling.org sells touring maps through California, as well as other states.
If you are looking for specific touring route advice, you might try the Touring forum.
Try Bikely.com or maybe your local bicycle club. You can try to route your own but be careful to watch for dirt roads, super busy highways, etc aren't always clear on the online maps. I usually scout out routes in my car first or take short deviations from my normal routes to try add distance or find some nice climbs.
