I'm riding a 2005 Rans Tailwind. There are some gears that are useful to me that as I understand it are ill advised to use because of cross chaining. These are as indicated on the shifters (front ring first) 1-4 (chain rubs the shift mechanism at all click stops) and 2-2 (rear derailleur gets real noisy). What do I need to change to get those gears?

Difficult without showing you how but basically as a starting point, shift to the center gear back and front adjust the cable it should have a knurled knob to center the derailleur to the chain back and front.
Shift in to small front and small rear, does the derailluer have the chain touching itself where it folds? if so remove enough links so that the chain just clears itself.
Now shift the rear to center gear and front to large, slowly step the rear to the largest gear making sure that the spring loading at the back derailler does not extend to where there is no flex left thus the slowly comment.
Fine tune cable length after test riding. Setup correctly you should on a recumbent be able to use all of the gear combinations without issue. I have even got my DFs setup to allow it.
Otherwise pop into your local libary and have a look at the bicycle repair books some of them are great with lots of pictures which help when starting out at wrenching.
