What is the lion for that the yellow jersey wearer holds after he wins a stage?

Yes I think they are one of the biggest sponsors, together with Aquarel, Champion and Skoda.

They've sponsored the yellow jersey for 25 years.
Champion sponsors the polka dot.
PMU has the green and the white is sponsored by Skoda.

It is the mascot of the sponsors, LCL - Le Credit Lyonnais. You can see their logo next to Floyd Landis' left armpit and under Lance's right arm on the jersey you can see their previous name 'Credit Lyonnais'.

The symbol of France is, I'm afraid to say, a cock. That is, a rooster.

Hence 'Le Coq Sportif' - a French sportswear brand.
