any advice on removing casettes? - ill be doing this for the first time today - and adding a singlespeed freewheel (not fixed).
also - since im adding a freewheel, is a re-dish necessary (as opposed to a fixed)?

A s.s. freewheel will not fit on a cassette hub.
i meant to say 1 cog, not freewheel - oops

If you are putting one cog and spacers on a cassette hub, you will not need to redish your wheel.
Are you installing a chain tensioner?
Removing a cassette is not a big deal. You need the cassette lockring remover, a big wrench (if your remover doesn't have a built in handle), and a chainwhip.
For some good advice go here:

Thats easy.
To remove the cassette you just need a lockring remover and a chainwhip. They are usually no problem.
You can break apart the cassette (dremmel, hammer and chisel)and use the spacers if you don't mind loosing it. If you have any smoked cassettes break these apart and use the spacers also. If you don't have any spacers you can get creative and use pvc pipe or whatever works (take a spacer to the hardware store as a refernece, it is amazing the stuff they have)
If you have a straight edge (a level or metre stick work well) place it accross the chainring and see where it coresponds in position to the cog. Move the spacers around the cog you decide on until you get a good chain line.
You do not need to redish if you move the spacers around.
sounds good - so redishing is only necessary with a fixed wheel ?
and if the wheel were not a casette hub - does the level of difficulty increase?
thanks again
figured it all out - its amazing what a bit of internet research will find :) thanks again
