I also found this NJ DOT page of bicycle routes (http://www.state.nj.us/transportation/commuter/bike/tours.shtm)
I looked at three of the routes offered in PDF format, each around 25-30 miles, and they looked promising with nice maps and directions. And the long High Point to Cape May route was there as a giant-size PDF download.

Seems to me that with the improvements to lots of the roads during the last ten years, New Jersey has a lot to offer for exercise and exploring on a road bike.

(One thing that might help that page is if it offered a couple of words on the length and hilliness of each of the routes. Like I think the Raritan Valley route is significantly more hilly than the Pine Barrens, and for lots of riders the difference matters lots)
