I've been looking for a headset for a steel frame I'm having built, and ran across King in Steel, Ti, and AL.
The Steel one seems to be ideal for a SS 29er.
I'm wondering your informed opinions on this?

As in the King steelset? Smells of overkill in this application.
And Ti headsets? Is the goal here mostly bling? (not that there's anything wrong with that)
The aluminum one is bombproof enough
although, you can't argue with the realness of the steel one

No, no bling. Just durability. It'll go on a 4" travel fork, on a steel frame, and I'm a heavy (220) person, and have been known to ride things simply into the ground.
