Has anyone ever ridden from New York to Los Angeles? Do you know approximately how long it might take? Do you recommend any certain interstates?

Couldn't give the first direction for that route, but I would recommend staying off any interstates - it's illegal.
I believe coast to coast is a little over 3,000 miles, so not knowing what condition you're in, nobody can give you an accurate estimate.

Ditto on the interstate. Even if they were legal, it would be a truly horrible ride. Look at www.crazyguyonabike.com for a million people who have done the xc routes.

Cool thing on Google Maps - you can now choose to avoid highways! Just input your beginning and end locations, then select "avoid highways": http://maps.google.com/maps?tab=wl
If you want to cross relatively briskly, and the RAAM is a bit too fast for you, you could check into the Pac Tours: http://www.pactour.com/
