I plan on cycling around Australia next year

Over a 6 month period I may cover between 10-15000 kms, all depending on how much time I can get off work and how much money I have.

I am 6'2 and weight 95 kg (back to 90 soon)

If money was no object I would buy a Thorn eXp fully speced up.

A more realistic option is to buy a Surly LHT frameset and build according to my needs
I am willing to pay within reason for reliability

So, please help me choose the best components for the job

What wheels and groupset etc should I go for?

Go for the Surly Build, the components are well thought out and durable.
