Its really a personal choice.

Like boxers v briefs or redheads v brunettes

I run tubeless on every Mountain bike I have, but I wear boxer briefs and married a blonde.

Three people I race with just switched over to crossmark eXCeption tubeless with sealant. Everyone claims they love it. The one issue is with your rims. Those using tubeless rims have had no problems seating the tires. However, the guy who converted with stans kit needed an air compressor.

their tires never tried to roll off the rim? asking because the sidewalls are so flexible

nope. In fact one guy won his expert race by 5+ minutes the first time he was riding them.

No harm done in that case... You might want to ride them first though. I have heard some reports of it taking some getting used to.
