There are plenty of 26" disc wheelsets availabe. I've never seen a wheelset say anything about being winter specific if that's what you are looking for. Sun Rhyno rims are pretty wide (wider than my MTB's stock Alex rims) which may help you out if you plan on running very wide tires. I use 1.95" studded tires on not-so-wide MTB rims for winter though.

You biggest concern as far as winter specific should be very good seals on the bearings of the hubs.
