I have 3 choices and I don't have a clue how to pick which one to get.

I am new to road bikes, but have done a lot of road rides on my mountain bike. I have ridden 75 miles on the mountain bike, and my plan is to ride 200+ miles and maybe do some races or duathalons.
Any advice or help you can give would be appreciated. If it's relevant, I am 5'11" and weigh about 215.
