If you get the cassette off, all you need to do is put on a single gear and call it good, or you could, I assume simply leave the multi casset on and call it good.. right?

Nieghbors bike: wants a SS now that he's played with my road fixed/free.

You can leave the whole cassette on, until you find out which gear is preffered. Then remove it. Why? Extra weight!
